Instant Dosa


Using flours very similar to Jayanti's 'Chapati Dosa', (another friend pointed out that the ingredients are very similar to that of a thaleepeeth) you can make instant dosa or uttapam on days when you have unexpected guests. This batter unlike most dosa batter doesn't need to rest for a few hours and can be used instantly.

Ingredients:


Wheat flour - 2 tbsps
Rice flours - 2 tbsps
Chana flour - 2 tbsps
Nachni flour - 2 tbsps
Jowari flour - 2 tbsps
Bajra flour - 2 tbsps
Finely chopped onion - 1/2
Finely chopped green chillies - 2
Finely chopped coriander leaves - 2 tbsps
Finely chopped tomato - 1/2 (optional)
Salt - to taste

Method:


Mix all the ingredients together with water and make batter that is of dosa batter consistency. Heat a non-stick dosa/pancake pan and sprinkle it with a little oil. Pour 2 ladles of the batter and spread it evenly to make the dosas.

Note:  If you're falling short of any flours you can just continue making the dosa with the rest of the flours. My friend Sharavati uses the multi-grain pancake flour that's available with besan and any other flour she has. You can try this dosa and it's toppings with various permutations and combinations.
